In most rural cottages the griddle was in regular use. Nearly every woman in rural Ulster could make soda bread. These were produced in 10 to 15 minutes, using a hot griddle. The necessary ingredients were flour, baking soda and buttermilk. The griddle was often lightly brushed with a turkey wing during the baking process.
