Summary: Irish Stew

Key dates:

After the famine there was a marked shift from arable to livestock farming. On poor upland areas tough mountain sheep were grazed. They provided the mutton used in Irish stew, a traditional dish which was popular in all parts of the country. Today beef is widely used in the preparation of Irish stew, but some people stick to the traditional recipe and use mutton.
