Key dates:

Hens scratching around a farmyard were a common sight in rural Ireland. At night these free-range hens would be shut in chicken huts to protect them from predators such as foxes. The farmer’s wife usually fed and looked after the hens. Eggs would have been used for eating or baking and there was always a demand for them in local towns and villages.
